I have a GoPro suction mount and a GoPro tripod adapter. That seems to work but the suction cup is in shot.

I'd use a magnet, maybe one from an antenna or similar

I bought a mount for the car on Ebay (about 1.5 $) and remote for Android VR (3-4$) since I mostly shoot photos, then, using Google Street View , it is removed from the machine hovering over the button and pressing on the remote control, any button... so you can remove in one motion without being distracted from driving

Stick it on a selfie stick and hold it above the car through the sunroof if you have one, worked for me  :)

I've a big stack of GoPro mounts so I'll use them most of the time with a tripod adaptor to mount the camera. However, I've found the camera really need to be away from the subject if at all possible to improve the effect. Just not sure hard mounting a 1m pole to the car is such a good idea.
