Can anybody tell me if there is any difference in the capabilities of Gear Manager in the S6 or S7 when using it to control the Gear 360 camera?

When you stitch video content on the phone only the S7  will do that in 4K, the other phones regress to 2560 x 1440 as the max stitching resolution. This is the only, but very important, difference.

Yes.

Action Director applies far more JPG compression to still images than Gear 360 Manager.

EDIT: Ooops i thought you were asking about using Action director - ignore this post!

No, images are stitched the same way on the S6 and S7.
